Police said he followed her into a car park, where she was sexually assaulted.
The woman, who is in her 20s, was found in a distressed state by a member of the public, who alerted the police.
She was taken to hospital and is being supported by specially trained officers.
Police have launched an investigation and the car park on Wallgate has been taped off while officers carry out their enquiries.
Supt Mark Kenny, from Greater Manchester Police, said: “This is an extremely serious offence which understandably may cause a lot of concern in the community, but I want to assure people that we have a team of detectives working to find the offender as soon as possible.
“There will be extra officers patrolling in the area and continuing with enquiries, and I would encourage anyone with questions or concerns to speak to them.
“There would have been a lot of people around the area at the time, as it is close to bars and restaurants, so I am confident people will have information.
“If you were in the area at the time and saw anything which could help with our investigation then please get in touch with police as soon as you can.
“Any detail, even if it seems minor, could be key to finding out who this man is and ensuring he is held to account for what he has done.”
