Hotel holding auditions for new upmarket eatery roles

A hotel is holding auditions rather than interviews for new staff roles being created by the opening of its new upmarket eatery.

Holland Hall will soon be opening a fine-dining restaurant, with specific skills and experience required of waiting staff.

“We’re looking for front-of-house waiting staff who have experience, for, among other things, flambéing dishes or filleting fish at the guests’ tables, which necessarily brings a bit of theatre to the experience,” said Holland Hall owner Bill Kenyon.

“I’ve been lucky enough to experience and dine in some of the world’s best restaurants, so I’ve established a benchmark in my mind of both the quality of food and quality of service guests expect and I intend to deliver.

“I’m open-minded as to the background of applicants.

“But key and crucial is an ability to make a very important and potentially pressured element of table service appear effortless, and even entertaining.

“It’s the sort of role that might appeal as a job-share between retired fine-dining staff, or could be for somebody just entering the trade having gone through training or an apprenticeship in such skills, and looking for an outlet for those skills.

“It is an exciting opportunity for somebody who wants to be in at the start and help shape or influence the standards of service.”

The auditions will occur at table in an environment and to a timeline that might be expected in the restaurant when it is at its busiest.
